Fish N Beer Chef-CEO Kevin Morrison of Tacos, Tequila, Whiskey fame is the doyen of intimate spaces, and this oysterette’s 50-seat, cozy-casual space is no exception. Central to the action is the show-stoppy, wood-fired grill, and the most coveted seats in the house will no doubt be at the chef’s counter where you can watch fish sizzle and oak flames burn.
Executive Chef and partner Aniedra Nichols, who formerly helmed the kitchen at Elways Cherry Creek, now leads the charge to source impeccably fresh seafood from both coasts, the Great Lakes and beyond, with special attention paid to sustainable and underutilized fish.
While FNB’s inspired seafood preparations include frying and pan-roasting, we suggest you opt for those licked by the flames of the wood-fired grille.
The well-shucked, wood-grilled oysters with either one of the savory butters win the shell game hands down. According to Chef Morrison, the oysters were the first items to grace the menu and now we know why.
Your meal will no doubt go swimmingly if you order the Colorado bass with sweet, succulent flesh and perfectly-crisped skin swabbed with a devil butter of grilled tomatoes, chile de árbol, and cider vinegar.
A fish mongers take on charcuterie, FNB’s board reels you in with a glistening soy-glazed salmon collar and smoked fish spread on grilled bread, plus a trio of accoutrements: tonnato (tuna mousse), giardiniera, and apple mostarda.
The celebrated fried blowfish tails (not to worry, they’re not the poisonous variety) with a sidecar of fries and dill-laced slaw will make you forget you’re a mile above sea level and swear you hear the squawking of gulls in the distance.
With suggested pairings to complement the flavor profiles of the fish — a treat for craft beer and seafood obsessives alike — the beverage program includes a revolving lineup of 16 brews on tap, half of which are local, including the house exclusive: Ratio Beerworks FNB French Saison, tailor-made for seafood.
The hours at this dinner-only, no-reservations seafood hub are 4-10 p.m. Monday through Saturday and 4-9 p.m. Sunday. Perfect for bringing any day of the week to a swashbuckling finish.
